Pears! Pinot! Pet Nat!
Pinot Gris and Seckle Pears grown by Ken Stanek at Lakeview Hill Farms which overlooks the very north end of Torch Lake and east Grand Traverse Bay. Pears were sweated for two weeks before pressing. Pinot Gris was gently foot tread and pressed whole cluster. Native yeast fermentation using pied de cuve of Folklor estate grapes. Bottled at 10 g/L. Hand disgorged. The result has a great balance of acidity, with just a whisper of pear cutting through the Pinot Gris. 75 cases produced.
